My brother converted to vegetarianism many years ago. I've always admired him for that. Even before he made the change, it was something I had contemplated.
When I was in college, I had many days where I ate no meat. I wasn't interested in cooking meat, so I didn't eat it.
After that, I got married. I love my husband, and he loves meat. He actually doesn't consider something a meal unless it has meat in it.
My vegetarian thoughts were pushed from my head. My best friend became a vegetarian while I was pregnant with Hadley. I admire her for a lot of things, and once again, the vegetarian diet re-entered my head. I didn't want to make any changes while I was pregnant.
And then I had a newborn. I had no time to think, much less, change my entire lifestyle. It fell off my radar.
And then I got pregnant. Again.
Last night my husband and I were on a date. We've been trying really hard to eat healthy, and we've both lost weight. We were discussing the diet, and the weight loss, and all the sudden the pescoterian ways came back to me.
So here it is....my 30 day pesco-vegetarian challenge.
